Chocolate Truffle Recipe
2 pounds of Belgian Chocolate
1 quart of heavy cream

1/4 lb unsalted butter
1/3 Cup Liqueor of Choice
Melt the chocolate and cream in a double boiler.
Whisk in the butter and liqueor
Continue to whisk as the mixture cools and thickens
Pour into quart containers and refrigerate
To serve scoop out with melon baller and roll in cocoa powder
Makes about 2 lbs of truffles, enough to share.
